Portuguese stew (Cozido à Portuguesa)

ingredients:

  • beef, suitable for baking;
  • chicken half;
  • 1 foot pork, ribs, chispe;
  • ham, sausage, sausage, pepperoni;
  • salty bacon, bacon;
  • fresh and smoked Orelheira;
  • Portuguese kale (bunch) or heart;
  • carrots, potatoes, turnips;
  • salt and olive oil qs

preparation:


  1. Start by cooking all the meat in a large pot. Meats that are saltier should soak a few hours previously and only then put to bake.
  2. Pour the cooking water with a little olive oil and season to taste. By order of faster cooking, will be taking the sausages, then the pork, and only at the end is that you remove the beef after thoroughly cooked.
  3. Taking advantage of the same water cook the meat, place the vegetables. When they are cooked, remove the pan from the heat, leaving the vegetables inside.
  4. To serve, cut the meat, arrange on a platter with their vegetables. You can follow up with baked beans, also cooked in water vegetables and white rice.
